The Military Diet

With today being the first day of spring I'm sure a lot of you are looking for a way to kick start your healthy living to get bikini ready. I'm all about eating healthy year round, but I understand a lot of you want a fast way to help you eat healthier for the summer time. I decided to try a jump start plan, I refuse to call it a diet, that I was seeing all over Pinterest. I'm all for trying new things and letting my viewer know how it goes, just think of me as your ginny pig! hehehe

What I did enjoy about this plan was I already had a lot of what I needed in the house already, so I didn't spend that much money at the grocery store. Honestly that's the only thing I did like about it though. You'll see what I mean after you look closely at the picture posted below...

Basically during the three days of this jump start to eating healthier you eat NOTHING. I'm used to eating 5 small meals a day every 2-3hours so this was very hard for me. I read a lot of reviews about women losing at least 10lbs doing this and feeling extremely energized, but I felt the opposite. I was extremely sluggish and couldn't finish my workouts, even though it does recommend to work out.

Another thing I didn't like about this plan is it's not very specific about what items to eat. Should it be all natural peanut butter or regular JIF? Should it be low fat 1% cottage cheese or 2%? The "diet" says it's all about the chemical break down of foods and that's why you're eating crazy combinations of food and can have ice cream, but I would think with those factors it would be more specific.

Needless to say I would not recommend trying this. I really struggled with this one. I truly believe you can eat healthy and feel satisfied and full. You should not have hunger pains and feel deprived when trying to change your lifestyle and become healthier.

Oil-Free Avocado Dressing

With Saint Patrick's Day being tomorrow I only thought it fit to share a yummy green recipe with you! I'm not Irish, but my boyfriend is and he takes "his" holiday very seriously. We have already had corn beef and cabbage this weekend, but I wanted to whip up something green and festive. I created an oil-free dressing that's great for your favorite salads or on top of chicken and fish. It's extremely light and fresh making it perfect for the upcoming warm months. 

Here's what you will need...

Ingredients:

1 ripe avocado 
1/2 cucumber
1/4 cup water
Juice of 1 lemon

Directions:

1. Combine all ingredients in your food processor.

2. Season with salt and pepper to taste.

3. Pour into container of choice and refrigerate. 

Mine usually lasts in the fridge for a week or so, but I normally eat it all before then. Add or subtract water based on how thin or thick you want the dressing.

Grapefruit Strawberry Smoothie

I have been on a smoothie kick lately! Probably because I'm so excited it's the last weekend of winter and we have actually had some warm weather in Rhode Island. To go along with my smoothie kick I came across a contest for Women's Health Magazine on Instagram. It's to post your own grapefruit smoothie that you love. 

It was perfect timing to create my own concoction and feed my smoothie addiction! Here's what you will need...

Ingredients:

3/4 large grapefruit
1 cup frozen strawberries (unsweetened)
6 Tbsp plain greek yogurt
3 Tbsp raw honey
2 heaping Tbsp unsweetened coconut
1 Tbsp Flax meal
1 Tsp Enjoy Life chocolate chips

Directions:
1. Combine all ingredients in blender until smooth and thick.

2. Pour into cup of choice and top with shredded coconut and Enjoy Life chocolate chips.


3. Enjoy!

Cinnamon Chocolate Oats

I consider the best breakfast one that's good for you, filling, and can made in less than five minutes. That's why my go to breakfast is usually oatmeal. Now if you don't like oatmeal just hear me out, because there's so many different options you can choose from.



This morning I was running late, what a surprise. So I decided to make my favorite oatmeal. It's super simple and easy to make. Here's what you need...

Ingredients:

1/2 cup of oats (I use Trader Joe brand)
1 scoop vanilla protein powder (I used About Time)
1/2 cup water
Splash of unsweetened almond milk
1 Tbsp cinnamon
1 Tbsp chocolate chips (Enjoy Life) Found The Cheapest Ones Here!

Directions:

1. Combine all ingredients in a microwave safe bowl.

2. Microwave for 2 minutes stirring one minute in.

3. Top with more chocolate chips if desired & Enjoy!

Strawberry Coconut Protein Smoothie

I spent this past weekend in New York City to celebrate a friends birthday. It was tons of shopping and eating, so obviously today is a rewind, restart, recharge the body kind of day when it comes to eating. 
With the warm weather we have been having in Rhode Island I thought a great option would be an ice cold smoothie! 

It's a perfect option for a quick meal and can really curb your sweet tooth. Here's what you will need...
 
Ingredients:
 
3/4 cup frozen strawberries
1/4 cup plain greek yogurt
1 packet of Perfect Fit protein (or protein of your choice)
3 tbsp unsweetened shredded coconut
1/2 cup unsweetened almond milk
 

Directions:
 
1. Pour everything into blender and cover. 
 
2. Blend until completely smooth. 
 
3. Top with some shredded coconut & Enjoy!

Creamy Healthy Tomato Basil Soup

My boyfriend has the flu, so needless to say I have been cleaning our house like a crazy woman. I'm such a germ-a-phobe it's a little ridiculous, but I can not get sick this week. I have an exciting girls weekend in NYC that I do not want to miss.

Although I'm trying to keep my distance and stay out of the house as much as possible I still want to take care of him. Last night all he wanted was soup and grilled cheese, I would normally create a healthier option for him, but I felt bad so I came up with a healthier tomato soup and let him eat a normal grilled cheese! I know I'm so nice, but don't tell him the soup was a healthier option, he has no idea!

I love tomato and basil together, they compliment each other so well. This soup is rich and creamy with a lot less sodium than the canned options at your local grocery store. Here's what you will need...

Ingredients:

2 cups of low sodium chicken broth

1 pound fresh tomatoes (diced)

1 Tbsp tomato paste

1 cup chopped onion

5 Tbsp plain greek yogurt

2 Tbsp chopped fresh basil

Directions:

1. Dice your tomatoes, onion, and basil.

2. In a medium sauce pan combine chicken broth, half your tomatoes, half your onion, and half your basil over medium heat.

3. In your food processor, or blender works just as well, combine the remaining of your tomatoes, onion, basil, tomato paste, and greek yogurt.

4. Take your combined ingredients from the food processor and mix with ingredients in sauce pan. Let cook over medium heat for 20 minutes, covered.

5. Your creamy soup should bubble a little bit, that's when it is ready to serve!

6. Pour into bowls and serve garnished with a basil leaf or dollop of plain greek yogurt.


If you don't like your soup semi-chunky like I do, that ok! Just combine all the ingredients in your food processor before cooking it. This soup taste so fresh and comforting, my boyfriend loved it.

Homemade Blueberry Jam

Happy Sunday Funday! I hope everyone had an amazing weekend. Today was a lazy day for me, I ran a few errands and basically stayed home all day. We're supposed to be getting a lot of snow tomorrow and I'm really not looking forward to it, but at least I have my yummy jam to look forward to this week!
 




It's a very simple recipe that you can make in twenty minutes. Here's what you will need...
Ingredients:
1 or 2 cups fresh blueberries (depending on how much you want)
2 Tbsp Chia seeds
2 Tbsp water
1 Tbsp raw honey (optional)
Directions:
1. Cook blueberries in saucepan over medium heat with 2 Tbsp water.
2. Let simmer for 15 minutes or until blueberries easily mash.
3. Once blueberries are cooked mash with fork or spatula and mix in chia seeds.


4. Let cool and pour into your jar.

5. Eat when cooled in fridge!
This jam is great by itself or you can add 1 Tbsp of honey to your jam for sweetening. What I love about it you know exactly what's in it, blueberries!
